We’re just a few weeks away from the Boudavida Women’s 10k, Windsor and race day preparations are in full swing. Nature’s Energy Bites (pictured above)
These little chunks of energy are a must-have for a pre or post-race snack. If you’re a preparation person, rustle these up the evening before in no time and pop them in the fridge overnight to chill before cutting.
Packed with pecan nuts, Meridian Peanut Butter and Date Syrup, along with ground almonds, apricots, raisins and a sprinkling of desiccated coconut as a finishing touch, these bitesize treats are so quick and easy to make and will guarantee you the get-up-and-go you’ll want to get you across that finish line.
Chocolate Banana Peanut Butter Mini Breakfast Muffins
Created and inspired by Zanna Van Dijk, fitness blogger extraordinaire. Here Zanna explains why this is her breakfast of champions:
“These muffins are the perfect breakfast option for when you’re feeling like making a healthy but indulgent choice. With slow releasing carbohydrates and healthy fats, they provide a filling breakfast which you can easily take on the go! Serve warm or cold – my favourite way is to microwave a couple for 30 seconds and serve them with Greek yoghurt and berries.”
A combination of banana, Meridian Smooth Peanut Butter, oats, chocolate and maple syrup, Zanna has designed a snack which will kick start your day or make a great treat to enjoy after the race. These muffins cook for 12-15 minutes in the oven so plan ahead if you want these for your finish line feast.
