Berry Pancakes

Berry Pancakes (makes 2 servings)

Shrove Tuesday is fast approaching so we thought this would be a great time to announce Boudavida’s new Nutrition Expert Fiona Campbell, who will be guest blogging for us about seasonal snacks, healthy alternatives and nutritional advice.

Fiona is a registered Nutritionist and Naturopath, TV/Radio presenter and health writer so naturally, we’re delighted to be working with her. In her first blog for Boudavida, Fiona has shared her guilt-free pancake recipe meaning that you can enjoy pancake day the healthy way!

What you will need:

  • 1 medium egg (I prefer to use organic free range eggs)
  • 50g oats or oat flour
  • 1 tbsp Pulsin whey or Pea protein powder (optional)
  • 100ml coconut milk
  • 50ml water
  • 1 tsp plain coconut yoghurt for the pancake mix (I use CoYo), or the real Icelandic Skyr Yoghurt from MS Iceland Dairies
  • 1 tsp coconut oil (I use Naturya’s Organic Coconut Oil)
  • 2 small handfuls of fresh berries, 1tbsp of maple syrup and another tbsp. of coconut yoghurt for the topping

First, whip or blend the flour, eggs and protein powder (optional) together until you have a smooth paste. Once complete, add the water and yoghurt to make a smooth batter. By adding the protein powder and Skyr, this will give your batter a silkier texture as well as a protein boost which is crucial for helping your body repair after you train.

Now you’ve got your batter, heat the coconut oil in the pan and gently add 3tbsps of batter. Cook until golden and flip gently to ensure both sides are cooked.

If you’re wondering why I use coconut oil as opposed to vegetable oil, it’s because there are so many health benefits associated with coconut based products! Coconut based products contain caprylic acid which helps to discourage the overgrowth of unfriendly forms of yeast in your gut.  A happy tummy means better absorption of nutrients, and a more robust immune system, which means better health all round!

Once cooked, set to the side and top with another tbsp. of coconut yoghurt and berries. The berries add antioxidants which help to protect your cells from damage and help to slow down the ageing process too – it’s a win win for us!  

Top tip: studies show that the timing of a post-training meal is important for ensuring that you get the best results for your efforts. So, if you prepare the batter or the pancakes in advance, you’ll be able to eat them within the all-important 20-minute window.
